For the second time, together with CALZA CLEMENTE, a technological trip to Italy for the heads of production departments of leading Ukrainian enterprises was organized.
The purpose of the trip was to get acquainted with the classic Italian cheese-making practices and to visit the factories for the production of cheese of the Pasta Filat group (mozzarella, pizza cheese, skamorza) and Grana Padano and Provolone cheese.
CALZA CLEMENTE technologists have shared the nuances and features of classic Italian cheese making processes. We examined and selected the ingredients that can be used for the production of continental cheese and cheese of the Pasta Filat group. Special attention was paid to ensuring the stable quality of the cheese and maintaining the shelf life.
